A rich and moist chocolate cake infused with Guinness beer and topped with luxurious Irish buttercream, perfect for celebrations or a cozy treat.


Ingredients

  • 1 cup Guinness beer
  • 1 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup Irish cream liqueur

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix the melted unsalted butter with the Guinness until they’re perfectly blended. Add in the eggs, buttermilk, and vanilla extract, stirring until smooth.
  4. Gradually introduce the wet mixture to the dry ingredients, combining gently until just mixed.
  5. Divide the batter evenly between the two prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.
  8. For the buttercream, beat softened butter with powdered sugar until it’s smooth and fluffy. Gradually mix in the Irish cream liqueur until you achieve your desired consistency.
  9. Once the cakes are cooled, frost them generously with the Irish buttercream. Slice, serve, and indulge!
