Description

A hearty casserole that combines the comforting elements of tacos with the satisfaction of a casserole, perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground turkey in a large skillet over medium heat until browned, breaking it apart as it cooks.
  3. Add the spices: chili powder, cumin, garlic powder, salt, and pepper. Mix well to ensure even seasoning.
  4. Combine the cooked rice, black beans, salsa, and the turkey mixture in a large mixing bowl. Stir until well combined.
  5. Transfer the mixture to a greased casserole dish, spreading it evenly, then top with shredded cheese.
  6. Bake for 25–30 minutes or until the cheese is bubbly and golden.
  7. Garnish with green onions if desired. Serve hot and enjoy!

Notes

For a vegetarian option, substitute the turkey with more beans or a meat alternative. Serve with sides like green salad or tortilla chips.
