A hearty one-pan meal featuring ground turkey and sweet potatoes, perfect for busy weeknight dinners.

- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 pound ground turkey
- 1.5 tablespoons ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup onion, diced
- 1 yellow bell pepper, diced
- 3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
- ½ cup water
- ½ cup mozzarella, shredded
- ¼ cup fresh cilantro, chopped
Instructions
- Heat a large cast iron skillet over medium-high heat and add the olive oil.
- Add the minced garlic and cook for about 1 minute, until fragrant.
- Throw in the ground turkey and use a wooden spoon to break it apart. Cook for approximately 8 minutes, or until browned.
- Stir in the cumin, chili powder, salt, and pepper, mixing well.
- Add the diced onion and bell pepper, cooking for another 3-4 minutes until they soften.
- Stir in the diced sweet potatoes and water. Cover with a lid and let it cook for 6-8 minutes, or until the sweet potatoes become tender.
- Remove the lid and taste; adjust salt and pepper as necessary.
- Sprinkle the shredded mozzarella over the top and allow it to melt.
- Garnish with fresh cilantro before serving.
Notes
Feel free to substitute ingredients based on what you have at home. Great for meal prep and can be stored in the fridge for up to 3-4 days.
