- 2–3 tablespoons butter
- 1 1/2 cups sliced carrots (approximately 2 carrots)
- 3/4 cup sliced celery (approximately 3 celery ribs)
- 1 yellow onion (sliced)
- 2 garlic cloves (minced)
- 1 pound ground turkey
- 2 teaspoons dried thyme
- 4 cups chicken broth (32 ounces)
- 2 dried bay leaves
- 5 cups chopped cabbage (approximately 1/2 head)
- 1 tablespoon Better than Bouillon (Roasted chicken flavor)
- 1/8 teaspoon white pepper
- Salt and pepper (to taste)
Instructions
- Melt the butter in a stock pot over medium heat. Add the sliced carrots, celery, onion, and minced garlic. Sauté for about 5 minutes.
- Sprinkle in the dried thyme and add the ground turkey. Break it up and stir until no longer pink, about 5-6 minutes.
- Pour in the chicken broth and add the Better than Bouillon. Stir until fully dissolved.
- Add the chopped cabbage, bay leaves, and white pepper. Adjust seasoning with salt and black pepper if needed.
- Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes until the vegetables are tender.
- Serve hot with a slice of crusty bread.
Notes
This soup can be customized with lean beef or chicken for different variations and can be made vegetarian with vegetable broth.
