Instructions
- Prepare the marinade: In a bowl, whisk together olive oil, balsamic vinegar, dried oregano, salt, and pepper.
- Chop the vegetables: Cut bell peppers into strips, slice the zucchini into rounds, and quarter the cherry tomatoes and red onion.
- Marinate: Place the chopped vegetables in a large zip-top bag or bowl, pour the marinade over them, and toss to coat. Let it marinate for at least 15 minutes.
- Preheat the grill: Heat your grill to medium-high and oil the grill basket if using.
- Grill the veggies: Place marinated vegetables on the grill and cook for about 10 minutes, turning occasionally until tender and marked.
- Garnish and serve: Remove veggies from the grill and sprinkle with fresh herbs if desired.
