  • 8 small corn or flour tortillas

Instructions

  1. Prep the steak: Start by patting the steak dry and seasoning it with olive oil, smoked paprika, garlic powder, chili powder, cumin, salt, and pepper. Allow it to marinate for at least 15 minutes.
  2. Cook the steak: Preheat your grill or stovetop skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes per side for medium-rare. Once done, let it rest before slicing it thinly against the grain.
  3. Prepare the elote topping: In a bowl, combine the corn kernels, mayonnaise, sour cream, crumbled cotija cheese, chili powder, lime juice, and salt. Mix thoroughly until well combined.
  4. Warm the tortillas: Heat the tortillas briefly on the grill or in a skillet until warm and pliable.
  5. Assemble the tacos: On each tortilla, layer slices of steak, followed by a generous spoonful of the elote topping. Feel free to garnish with chopped cilantro.
