Description

Ingredients

  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Start by grilling the corn until it’s slightly charred. Let it cool before cutting the kernels off the cob.
  2. In a large mixing bowl, combine the grilled corn, diced avocado, and halved cherry tomatoes.
  3. In a separate small bowl, whisk together the olive oil, lime juice, paprika, cumin, salt, and pepper until well blended.
  4. Pour the dressing over the salad and gently toss everything together to combine the flavors.
