- 3 cups yellow summer squash, sliced
- 1 can green chiles, diced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup crushed crackers (for topping)
- 1/2 cup milk
- 2 eggs
- 1 onion, chopped
- Salt and pepper to taste
- Butter (for greasing the dish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with butter to prevent sticking.
- In a skillet, sauté the chopped onion over medium heat until it turns translucent. Add the sliced yellow squash and cook until it’s softened, about 5-7 minutes.
- In a mixing bowl, combine the sautéed mixture with the diced green chiles, shredded cheese, milk, and eggs. Season everything with salt and pepper to taste.
- Pour the combined mixture into the prepared baking dish. Top generously with crushed crackers.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is set.
- Allow to cool slightly before serving to let the flavors meld.
