Description

A quick and flavorful stir fry featuring tender chicken thighs, vibrant bell peppers, and crisp green beans, all coated in a delicious sweet chili sauce.


Ingredients

  • 2 lbs boneless skinless chicken thighs (cut into cubes)
  • 3 tbsp cornstarch
  • 1/4 cup vegetable oil (plus more as needed)
  • 2 bell peppers (sliced)
  • 1 cup steamed green beans
  • 1/2 tbsp minced garlic cloves
  • 1/4 tsp ginger (optional)
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper
  • 1/8 tsp sesame oil
  • 1 1/4 cups sweet chili sauce

Instructions

  1. Prep the chicken: Place the cubed chicken thighs in a large mixing bowl. Add 1 tablespoon of vegetable oil, garlic powder, salt, and black pepper to taste. Mix everything well until the chicken is evenly coated. Dust with cornstarch and toss again to ensure even coating.
  2. Cook the chicken: Heat your wok or skillet over medium-high heat and add vegetable oil. Once shimmering, add chicken in batches to avoid overcrowding. Cook until golden brown and cooked through, then set aside.
  3. Sauté the vegetables: In the same pan, add more oil if needed and toss in sliced bell peppers. Stir-fry until they start to soften. Add minced garlic and optional ginger, stirring until fragrant.
  4. Combine everything: Return crispy chicken to the pan along with steamed green beans. Pour in sweet chili sauce, add a dash of sesame oil, and sprinkle in crushed red pepper. Stir gently and let simmer for 2-3 minutes until sauce thickens.
  5. Serve: Dish out your stir fry hot over steamed white or jasmine rice. Optionally, sprinkle sesame seeds or chopped green onions on top.

Notes

For a lighter option, the stir fry can be enjoyed solo without rice. Customize with your favorite vegetables like broccoli or snap peas.
