- 1 ¼ cups thick Greek yogurt (divided)
- ½ cup maple syrup
- ⅓ cup crunchy peanut butter
- 1 cup oat flour
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup cocoa powder
- ¼ cup dark chocolate (chopped)
Instructions
- Preheat your oven to 350°F (or 320°F fan). Prepare an 8’’x8’’ square baking dish by lining it with parchment paper.
- Mix together 1 cup of Greek yogurt, maple syrup, and peanut butter until well combined.
- Sift in the oat flour and baking powder into the wet mixture. Stir until you form a thicker batter, then add the salt and mix well.
- Take about 2/3 of the batter and add the cocoa powder and the remaining ¼ cup of Greek yogurt. If the batter feels too thick, don’t hesitate to add a splash of milk.
- Fold the chopped chocolate into the remaining 1/3 of the batter, saving a little to sprinkle on top later.
- Spread the cocoa batter across the bottom of the prepared baking dish, leveling it out smoothly.
- Layer the light batter on top and smooth it out. Use a knife or skewer to create a marbled effect, then sprinkle the reserved chocolate pieces over the top.
- Bake for approximately 30 minutes, then let the brownies cool in the pan before slicing into squares.
Notes
These brownies can be enjoyed warm with yogurt or with fresh berries. Store in an airtight container at room temperature for up to four days.
