Description

A delightful dessert that embodies the comforting flavors of Mediterranean cuisine, perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 3/4 cup honey (plus extra for glazing)
  • 1/2 cup sugar
  • 1/2 cup olive oil
  • 3/4 cup Greek yogurt

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
  2. Whisk together the eggs, honey, sugar, olive oil, Greek yogurt, and orange zest in a large mixing bowl until smooth.
  3. Combine the all-purpose flour, baking powder, cinnamon, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into your prepared pan and smooth the surface evenly.
  6. Bake in the preheated oven for 35–40 minutes, until a toothpick inserted into the center comes out clean.
  7. Drizzle the top with additional honey while the cake is still warm.
  8. Allow the cake to cool slightly before serving. Enjoy!

Notes

For a twist, mix in dried fruits or swap the orange zest with lemon zest.
