Description

A comforting dish featuring potato gnocchi baked in a rich tomato sauce, topped with melting mozzarella and fresh basil.


Ingredients

  • 500g potato gnocchi
  • 400g canned tomatoes or tomato passata
  • 200g mozzarella cheese, diced
  • 50g grated Parmesan cheese
  • 2 cloves of garlic, minced
  • Fresh basil leaves
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Drizzle olive oil in a large skillet and warm over medium heat. Add minced garlic and sauté until fragrant.
  3. Stir in the canned tomatoes or tomato passata, seasoning with salt and pepper. Allow it to simmer for about 10 minutes.
  4. Cook the potato gnocchi according to package instructions, then drain.
  5. Mix the cooked gnocchi with the thickened tomato sauce and half of the diced mozzarella.
  6. Transfer the mixture into a baking dish.
  7. Scatter the remaining mozzarella and sprinkle the grated Parmesan and fresh basil on top.
  8. Bake for 20-25 minutes, until the cheese is golden and bubbly.
  9. Serve hot and enjoy!

Notes

For a creamier sauce, consider adding a splash of cream or blending in some ricotta cheese. This dish can also be frozen for longer storage.
