- 500g potato gnocchi
- 400g canned tomatoes or tomato passata
- 200g mozzarella cheese, diced
- 50g grated Parmesan cheese
- 2 cloves of garlic, minced
- Fresh basil leaves
- Olive oil
- Salt
- Pepper
Instructions
- Preheat your oven to 200°C (400°F).
- Drizzle olive oil in a large skillet and warm over medium heat. Add minced garlic and sauté until fragrant.
- Stir in the canned tomatoes or tomato passata, seasoning with salt and pepper. Allow it to simmer for about 10 minutes.
- Cook the potato gnocchi according to package instructions, then drain.
- Mix the cooked gnocchi with the thickened tomato sauce and half of the diced mozzarella.
- Transfer the mixture into a baking dish.
- Scatter the remaining mozzarella and sprinkle the grated Parmesan and fresh basil on top.
- Bake for 20-25 minutes, until the cheese is golden and bubbly.
- Serve hot and enjoy!
Notes
For a creamier sauce, consider adding a splash of cream or blending in some ricotta cheese. This dish can also be frozen for longer storage.
