Description

Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt in a large mixing bowl. Stir well.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat the egg and vanilla extract into the butter-sugar mixture until well incorporated.
  5. Blend the dry ingredients into the wet mixture until combined.
  6. Drop generous spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the edges turn golden brown.
  8. Remove the cookies from the oven and allow them to cool completely on a wire rack.
  9. Prepare the filling by mixing the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spread a layer of the cream filling between two cookies to create a cream pie sandwich.

Notes
