- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup cream cheese, softened
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the rolled oats, all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt in a large mixing bowl. Stir well.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat the egg and vanilla extract into the butter-sugar mixture until well incorporated.
- Blend the dry ingredients into the wet mixture until combined.
- Drop generous spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges turn golden brown.
- Remove the cookies from the oven and allow them to cool completely on a wire rack.
- Prepare the filling by mixing the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread a layer of the cream filling between two cookies to create a cream pie sandwich.
