Description

A deliciously spiced gingerbread bundt cake topped with a maple cinnamon glaze, perfect for holiday gatherings.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 cup molasses
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a bundt pan well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt until blended.
  3. In another bowl, cream the softened butter with the brown and granulated sugars until it becomes light and fluffy.
  4. Gradually add the eggs, mixing well after each addition to ensure a smooth batter.
  5. Mix in the molasses and buttermilk until everything is just combined.
  6. Carefully fold the dry ingredients into the wet mixture, taking care not to overmix.
  7. Gently fold in the chopped pecans, which add a delightful crunch.
  8. Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool for about 10 minutes in the pan before inverting it onto a wire rack to cool completely.
  11. For the glaze, whisk together the powdered sugar, maple syrup, vanilla extract, and ground cinnamon until smooth.
  12. Drizzle the glaze generously over the cooled bundt cake and sprinkle with additional pecans if desired.

Notes

Serve with whipped cream or vanilla ice cream for an indulgent treat.
