Description

Delightful ginger molasses cookies that perfectly balance sweet molasses with warm spices, perfect for holiday gatherings or cozy evenings.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Sugar for rolling the cookies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream the softened butter and packed brown sugar until it’s smooth.
  4. Beat in the molasses, vanilla extract, and large egg until everything is well combined.
  5. Gradually add the dry mixture into the wet mixture, mixing until just combined.
  6. Roll the dough into balls and then roll each in sugar to coat. Place them on a baking sheet.
  7. Bake for 8-10 minutes, just until the edges are set but the centers are still soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks.

Notes

Cookies can be stored in an airtight container for up to a week or frozen for up to three months. For best results, use softened butter and do not overmix the dough.
