- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups chicken broth
- 1 cup long-grain white rice
- 1 cup carrots, sliced
- 1 cup bell pepper, chopped
- 2 tablespoons soy sauce
- Juice and zest of 2 limes
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat the olive oil over medium heat in a large pot.
- Add the diced chicken and cook until browned on all sides, roughly 5-7 minutes.
- Stir in the chopped onion, garlic, and grated ginger. Sauté until the onion becomes translucent, about 3-4 minutes.
- Pour in the chicken broth and bring to a simmer. Add the rice and cook for about 15 minutes, or until tender.
- Toss in the sliced carrots and chopped bell pepper, simmering for another 5-7 minutes until softened.
- Mix in the soy sauce, lime juice, and zest. Adjust seasoning with salt and pepper to taste.
- Sprinkle with freshly chopped cilantro just before serving.
Notes
For a vegetarian option, substitute chicken with turkey or tofu. Adjust vegetables based on availability.
