Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups chicken broth
  • 1 cup long-grain white rice
  • 1 cup carrots, sliced
  • 1 cup bell pepper, chopped
  • 2 tablespoons soy sauce
  • Juice and zest of 2 limes
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the diced chicken and cook until browned on all sides, roughly 5-7 minutes.
  3. Stir in the chopped onion, garlic, and grated ginger. Sauté until the onion becomes translucent, about 3-4 minutes.
  4. Pour in the chicken broth and bring to a simmer. Add the rice and cook for about 15 minutes, or until tender.
  5. Toss in the sliced carrots and chopped bell pepper, simmering for another 5-7 minutes until softened.
  6. Mix in the soy sauce, lime juice, and zest. Adjust seasoning with salt and pepper to taste.
  7. Sprinkle with freshly chopped cilantro just before serving.

Notes

For a vegetarian option, substitute chicken with turkey or tofu. Adjust vegetables based on availability.
