Description

A refreshing and tangy salad that showcases crunchy cucumbers, perfect for summer days or as a light side dish.

Ingredients

Scale
  • 2 large Cucumbers, thinly sliced
  • 1 teaspoon Salt
  • 1/2 cup White Wine or Apple Cider Vinegar
  • 1 tablespoon Sugar
  • 1 tablespoon Dill, fresh or dried
  • 1 small Onion, thinly sliced (optional)
  • Black Pepper, to taste (optional)

Instructions

  1. Begin by slicing the cucumbers thinly and placing them in a mixing bowl.
  2. Sprinkle the cucumbers generously with salt and let them sit for about 10-15 minutes to draw out excess moisture.
  3. Meanwhile, in a separate bowl, whisk together vinegar, sugar, dill, and black pepper until well combined.
  4. After draining the cucumbers, add them to the vinegar mixture.
  5. If you enjoy a bit of zest, toss in some thinly sliced onions.
  6. Mix everything well to ensure the cucumbers are coated.
  7. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

For best results, use a mandoline for thin slices and let the salad sit longer to meld flavors. This salad pairs well with grilled meats and is great for potlucks.
