Description
A refreshing and tangy salad that showcases crunchy cucumbers, perfect for summer days or as a light side dish.
Ingredients
Scale
- 2 large Cucumbers, thinly sliced
- 1 teaspoon Salt
- 1/2 cup White Wine or Apple Cider Vinegar
- 1 tablespoon Sugar
- 1 tablespoon Dill, fresh or dried
- 1 small Onion, thinly sliced (optional)
- Black Pepper, to taste (optional)
Instructions
- Begin by slicing the cucumbers thinly and placing them in a mixing bowl.
- Sprinkle the cucumbers generously with salt and let them sit for about 10-15 minutes to draw out excess moisture.
- Meanwhile, in a separate bowl, whisk together vinegar, sugar, dill, and black pepper until well combined.
- After draining the cucumbers, add them to the vinegar mixture.
- If you enjoy a bit of zest, toss in some thinly sliced onions.
- Mix everything well to ensure the cucumbers are coated.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
For best results, use a mandoline for thin slices and let the salad sit longer to meld flavors. This salad pairs well with grilled meats and is great for potlucks.
