- 2 cups vegetable broth
- 2 tablespoons olive oil
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a saucepan, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, cooking until they become translucent.
- Introduce the sliced mushrooms, cooking until they soften and release their juices.
- Stir in the rice, cooking for 1-2 minutes until it’s slightly toasted.
- Pour in the vegetable broth, add dried thyme, and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 15-18 minutes, or until the rice is tender.
- Fluff the rice with a fork, garnish with fresh parsley, and serve.
Notes
