Description

Ingredients

  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a saucepan, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, cooking until they become translucent.
  3. Introduce the sliced mushrooms, cooking until they soften and release their juices.
  4. Stir in the rice, cooking for 1-2 minutes until it’s slightly toasted.
  5. Pour in the vegetable broth, add dried thyme, and season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 15-18 minutes, or until the rice is tender.
  7. Fluff the rice with a fork, garnish with fresh parsley, and serve.
