- 400g spaghetti
- 250g Italian sausage
- 3 cups fresh spinach
- 4 cloves garlic, minced
- 4 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil, then add the spaghetti and cook until al dente. Drain and set aside.
- Sauté the sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks, until browned and cooked through. Remove from the skillet and set aside.
- Prepare the garlic and spinach: In the same skillet, add the butter and minced garlic. Cook for about 1 minute until the garlic becomes fragrant. Add the fresh spinach and sauté until it’s wilted.
- Combine ingredients: Return the cooked sausage to the skillet. Toss in the drained spaghetti, ensuring it gets well-coated in the garlic butter sauce.
- Add the cheese: Sprinkle the shredded mozzarella and grated Parmesan over the top. Cover the skillet with a lid and let it cook for 2-3 minutes, allowing the cheese to melt.
- Final touches: Season with salt and black pepper to taste. Toss everything gently to combine and serve hot.
Notes
For a lighter version, swap Italian sausage with turkey sausage or use gluten-free spaghetti if preferred.
