  • 400g spaghetti
  • 250g Italian sausage
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil, then add the spaghetti and cook until al dente. Drain and set aside.
  2. Sauté the sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks, until browned and cooked through. Remove from the skillet and set aside.
  3. Prepare the garlic and spinach: In the same skillet, add the butter and minced garlic. Cook for about 1 minute until the garlic becomes fragrant. Add the fresh spinach and sauté until it’s wilted.
  4. Combine ingredients: Return the cooked sausage to the skillet. Toss in the drained spaghetti, ensuring it gets well-coated in the garlic butter sauce.
  5. Add the cheese: Sprinkle the shredded mozzarella and grated Parmesan over the top. Cover the skillet with a lid and let it cook for 2-3 minutes, allowing the cheese to melt.
  6. Final touches: Season with salt and black pepper to taste. Toss everything gently to combine and serve hot.

Notes

For a lighter version, swap Italian sausage with turkey sausage or use gluten-free spaghetti if preferred.
