Ingredients

- 85 g bittersweet chocolate
- 150 g neutral oil (like canola or vegetable oil)
- 200 g granulated sugar
- 142 g brown sugar
- 3 eggs (room temperature)
- 2 teaspoons vanilla extract
- 120 g all-purpose flour
- 63 g Dutch process cocoa powder
- 21 g black cocoa powder
- 28 g espresso powder
- ½ teaspoon salt
- 127 g bittersweet chocolate (roughly chopped)
Instructions
- Preheat the oven to 350°F. Grease a mini muffin pan with softened butter.
- Combine the bittersweet chocolate and oil in a small bowl over simmering water until melted.
- Mix the granulated sugar, brown sugar, eggs, and vanilla in a large bowl with an electric mixer on high speed for about 5-6 minutes.
- Pour in the cooled chocolate and oil mixture slowly, mixing until combined.
- Add the all-purpose flour, cocoa powders, espresso powder, and salt gradually, mixing until just combined.
- Fold in the chopped bittersweet chocolate until evenly distributed.
- Spoon the batter into the mini muffin pan, filling each cup about three-quarters full.
- Bake for 15-18 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Allow to cool in the pan for a few minutes before removing.
Notes
For added flavor, consider adding nuts or a splash of almond extract. These brownie bites freeze beautifully when wrapped individually.
