Description

These delightful cookies capture the essence of childhood with colorful Fruity Pebbles and rich white chocolate, perfect for any celebration or sweet craving.


Ingredients

  • 1 1/2 cups salted butter (softened)
  • 1 cup granulated sugar (200g)
  • 1 cup packed brown sugar (200g)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 3/4 cups all-purpose flour (529g)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 cups Fruity Pebbles cereal (divided)
  • 1 cup white chocolate chips
  • 16 ounces cream cheese (at room temperature)
  • 7 ounces marshmallow cream
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Beat the softened butter and both sugars together for 2-3 minutes until creamy.
  3. Add the eggs and vanilla extract, mixing until well-combined.
  4. Mix in the flour, baking soda, baking powder, and salt until combined.
  5. Fold in 2 cups of Fruity Pebbles and the white chocolate chips.
  6. Scoop out 1/2 cup mounds of dough and shape them into balls, rolling each in the remaining Fruity Pebbles.
  7. Arrange on the prepared baking sheets, pressing down to flatten each cookie to about 1 inch thick.
  8. Bake for 11-13 minutes until edges set. Cool on baking sheet for 5 minutes before transferring to wire rack.
  9. Whip cream cheese until smooth, then add powdered sugar and marshmallow cream, mixing until creamy.
  10. Pipe the frosting onto cooled cookies and sprinkle with additional Fruity Pebbles for decoration.

Notes

For a lighter frosting, consider using whipped cream or simple glaze. Ensure butter is softened properly for best results.
