- 1 teaspoon salt
- 4 cups Fruity Pebbles cereal (divided)
- 1 cup white chocolate chips
- 16 ounces cream cheese (at room temperature)
- 7 ounces marshmallow cream
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Beat the softened butter and both sugars together for 2-3 minutes until creamy.
- Add the eggs and vanilla extract, mixing until well-combined.
- Mix in the flour, baking soda, baking powder, and salt until combined.
- Fold in 2 cups of Fruity Pebbles and the white chocolate chips.
- Scoop out 1/2 cup mounds of dough and shape them into balls, rolling each in the remaining Fruity Pebbles.
- Arrange on the prepared baking sheets, pressing down to flatten each cookie to about 1 inch thick.
- Bake for 11-13 minutes until edges set. Cool on baking sheet for 5 minutes before transferring to wire rack.
- Whip cream cheese until smooth, then add powdered sugar and marshmallow cream, mixing until creamy.
- Pipe the frosting onto cooled cookies and sprinkle with additional Fruity Pebbles for decoration.
Notes
For a lighter frosting, consider using whipped cream or simple glaze. Ensure butter is softened properly for best results.
