A nostalgic cake inspired by childhood favorite cookies, featuring fluffy vanilla layers and sweet white chocolate frosting.

- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup milk
- 1 1/2 cups crushed frosted animal cookies
- 2 cups white chocolate chips
- 1 cup heavy cream
- Sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy—about 3-4 minutes.
- Add the eggs to the butter mixture one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk.
- Fold in the crushed frosted animal cookies until evenly distributed.
- Divide the batter between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Melt the white chocolate in a microwave-safe bowl and let it cool slightly.
- Whip the heavy cream in a mixing bowl until soft peaks form. Gradually fold in the cooled white chocolate.
- Layer the cooled cakes with frosting in between and cover the top and sides with remaining frosting.
- Decorate with sprinkles and crushed frosted animal cookies.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. You can also use brown sugar for a richer flavor.
