Description

A nostalgic cake inspired by childhood favorite cookies, featuring fluffy vanilla layers and sweet white chocolate frosting.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 1 1/2 cups crushed frosted animal cookies
  • 2 cups white chocolate chips
  • 1 cup heavy cream
  • Sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy—about 3-4 minutes.
  4. Add the eggs to the butter mixture one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Fold in the crushed frosted animal cookies until evenly distributed.
  7. Divide the batter between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Melt the white chocolate in a microwave-safe bowl and let it cool slightly.
  9. Whip the heavy cream in a mixing bowl until soft peaks form. Gradually fold in the cooled white chocolate.
  10. Layer the cooled cakes with frosting in between and cover the top and sides with remaining frosting.
  11. Decorate with sprinkles and crushed frosted animal cookies.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. You can also use brown sugar for a richer flavor.
