  • 1/2 cup cornstarch

  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cold water
  • Oil for frying
  • Dipping sauce of your choice

Instructions

  1. Begin by cleaning the enoki mushrooms gently and trimming the base.
  2. In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and pepper.
  3. Gradually whisk in the cold water until you achieve a smooth batter.
  4. Heat a generous amount of oil in a deep frying pan over medium heat.
  5. Dip the enoki mushrooms into the batter, ensuring they’re well-coated, then carefully place them into the hot oil.
  6. Fry the mushrooms for about 3-4 minutes or until they turn a lovely golden brown and crispy.
  7. Once they’re ready, remove them and let them drain on paper towels to absorb any excess oil.
  8. Serve hot with your favorite dipping sauce.

Notes

For a gluten-free version, substitute gluten-free flour. Keep leftovers in an airtight container for up to two days.
