A vibrant and refreshing salad combining ripe tomatoes, aromatic garlic, and fresh basil.
Ingredients

- 4 ripe heirloom tomatoes, chopped
- 2 fresh garlic cloves, finely chopped
- 2 tablespoons extra virgin olive oil
- 1/4 cup fresh basil leaves, torn
- Sea salt, to taste
- Black pepper, to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Wash the tomatoes and cut them into wedges or bite-sized pieces.
- Peel and finely chop the garlic cloves.
- Combine the tomatoes and garlic in a mixing bowl.
- Drizzle with extra virgin olive oil and add balsamic vinegar if using.
- Tear the fresh basil leaves and sprinkle them over the top.
- Season with sea salt and black pepper to taste, tossing everything gently to combine.
- Let it sit for about 10 minutes before serving.
Notes
Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days.
