Description

A delightful twist on dessert with velvety banana goodness, brightened by zesty lemon and creamy butter.

Ingredients

Scale
  • 3 ripe bananas
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 2 large eggs
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine the ripe bananas, sugar, and lemon juice in a saucepan.
  2. Cook over medium heat until the mixture is warm and the bananas soften nicely.
  3. Whisk together the eggs in a separate bowl until smooth.
  4. Gradually mix the warm banana concoction into the eggs, stirring continuously to prevent scrambling.
  5. Return the entire mixture to the saucepan and cook on low heat, stirring constantly until thickened, about 5-7 minutes.
  6. Remove from heat and stir in the butter and vanilla extract until smooth.
  7. Cool before refrigerating until ready to serve.

Notes

Use ripe bananas for the best flavor. Always whisk eggs before adding hot ingredients. If the curd thickens too much, whisk in water to adjust texture.
