Description

Warm, gooey French toast transformed into delightful muffin cupsโ€”perfect for any breakfast or brunch!


Ingredients

Scale
  • 6 slices of bread (white, whole wheat, or brioche)
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup streusel topping (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease your muffin tin.
  2. Cut your bread into small cubes and place them in a bowl.
  3. Whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until blended.
  4. Pour the egg mixture over bread cubes and toss gently to coat.
  5. Divide the mixture into greased muffin tins until each cup is three-quarters full.
  6. Sprinkle streusel topping over each muffin cup if desired.
  7. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Let them cool for a few minutes, then pop out of the tin and enjoy warm.

Notes

Serve with maple syrup, whipped cream, or fresh fruit. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
