Description

A colorful and aromatic dish from Provence, Ratatouille celebrates summer’s bounty with vibrant flavors and a nutritious medley of vegetables.

Ingredients

Scale
  • 1 eggplant, diced
  • 2 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups tomatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the diced eggplant, cooking for about 5 minutes until it begins to soften.
  4. Add the sliced zucchini, chopped bell pepper, and diced tomatoes to the skillet.
  5. Season everything with dried thyme, basil, salt, and pepper.
  6. Reduce the heat to low, cover, and let the dish simmer for 30-40 minutes, stirring occasionally, until all the vegetables are tender.
  7. Serve warm, garnished with fresh basil to enhance the flavors.

Notes

Feel free to mix up the vegetables based on what’s in season or available. Consider grilling vegetables beforehand for a smoky flavor.
