A delightful twist on banana bread that combines the sweetness of bananas with grated carrots and warm spices for a moist and fluffy loaf.

- 2 ripe bananas, mashed
- 1 cup grated carrots
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour (can substitute whole wheat flour)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped nuts (optional—walnuts or pecans work great!)
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
- Combine the mashed bananas, grated carrots, vegetable oil, sugar, eggs, and vanilla extract in a large bowl. Mix well until blended.
- Whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. If using nuts, fold them in now.
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice it up and enjoy every bite!
Notes
Try serving it warm with butter or toasted for breakfast. Wrap tightly for storage and it can last up to 3 days at room temperature, or freeze for up to 3 months.
