Description

A delightful twist on banana bread that combines the sweetness of bananas with grated carrots and warm spices for a moist and fluffy loaf.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (can substitute whole wheat flour)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts (optional—walnuts or pecans work great!)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
  2. Combine the mashed bananas, grated carrots, vegetable oil, sugar, eggs, and vanilla extract in a large bowl. Mix well until blended.
  3. Whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. If using nuts, fold them in now.
  5. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Slice it up and enjoy every bite!

Notes

Try serving it warm with butter or toasted for breakfast. Wrap tightly for storage and it can last up to 3 days at room temperature, or freeze for up to 3 months.
