Description

Quick and delicious muffins made with ripe bananas and Greek yogurt, perfect for busy mornings or a sweet snack.


Ingredients

  • 2 ripe bananas (mashed)
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it.
  2. Mix together the mashed bananas, Greek yogurt, honey or maple syrup, egg, vanilla extract, and cinnamon.
  3. Whisk together oat flour, baking powder, and salt in another bowl.
  4. Fold the dry ingredients into the wet mixture gently until combined.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 18–20 minutes until a toothpick comes out clean.
  7. Allow to cool before transferring to a wire rack.

Notes

These muffins are great on their own or served with Greek yogurt and fresh fruit.
