Quick and delicious muffins made with ripe bananas and Greek yogurt, perfect for busy mornings or a sweet snack.
Ingredients

- 2 ripe bananas (mashed)
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup oat flour
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it.
- Mix together the mashed bananas, Greek yogurt, honey or maple syrup, egg, vanilla extract, and cinnamon.
- Whisk together oat flour, baking powder, and salt in another bowl.
- Fold the dry ingredients into the wet mixture gently until combined.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 18–20 minutes until a toothpick comes out clean.
- Allow to cool before transferring to a wire rack.
Notes
These muffins are great on their own or served with Greek yogurt and fresh fruit.
