- 2 large oranges
- 200g almond flour
- 150g granulated sugar
- 3 large eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
- Powdered sugar for dusting
Instructions
- Prepare the oranges: Start by boiling the whole oranges in water for about 120 minutes until soft. Let them cool, then chop them (remove any seeds) and blend into a smooth puree.
- Break the eggs: In a separate bowl, whisk the eggs and sugar together until fluffy and pale.
- Mix ingredients: Gradually fold in the almond flour and baking powder until combined. Then add the orange puree, vanilla extract, and a pinch of salt.
- Bake: Pour the batter into a greased round cake pan and bake in a preheated oven at 180°C (350°F) for about 40 minutes. The cake should be golden and firm to the touch.
- Cool and dust: Once done, allow to cool in the pan before transferring to a serving plate. Dust with powdered sugar before serving.
Notes
For the best results, use room-temperature eggs. Store in an airtight container for up to three days, or freeze individual slices for longer storage.
