Description

A stunning twist on the classic Black Forest cake combining rich chocolate with light whipped cream and cherries.


Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons powdered sugar (for dusting)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for whipped cream)
  • 1 teaspoon vanilla extract (for whipped cream)
  • 1/2 cup chopped cherries (fresh or jarred)
  • 2 tablespoons kirsch or cherry juice (optional)
  • 1/2 cup heavy cream (for ganache)
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter
  • Whipped cream (optional, for piping)
  • Whole cherries and chocolate curls or shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  3. Beat the eggs and granulated sugar together until light and fluffy. Stir in the vanilla extract.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
  5. Fold the dry ingredients into the egg mixture until fully combined.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for about 12–15 minutes until the cake springs back when lightly touched.
  8. Turn the cake onto a kitchen towel dusted with powdered sugar while still warm and roll it with the towel inside.
  9. Allow it to cool completely in this position.
  10. Beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Fold in the chopped cherries and optional kirsch.
  11. Unroll the cooled cake and spread the cream filling evenly over the surface. Reroll without the towel.
  12. Heat the heavy cream until it simmers, then pour it over the chopped chocolate and butter. Stir until smooth.
  13. Drizzle the chocolate ganache over the cake roll and garnish with whipped cream, cherries, and chocolate curls.
  14. Slice, serve, and enjoy!

Notes

Store in the refrigerator for up to 3 days or freeze for up to a month. Roll the cake while warm to prevent cracking and use a serrated knife for clean cuts.
