A stunning twist on the classic Black Forest cake combining rich chocolate with light whipped cream and cherries.

- 4 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons powdered sugar (for dusting)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar (for whipped cream)
- 1 teaspoon vanilla extract (for whipped cream)
- 1/2 cup chopped cherries (fresh or jarred)
- 2 tablespoons kirsch or cherry juice (optional)
- 1/2 cup heavy cream (for ganache)
- 4 ounces dark or semi-sweet chocolate, chopped
- 1 tablespoon butter
- Whipped cream (optional, for piping)
- Whole cherries and chocolate curls or shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- Beat the eggs and granulated sugar together until light and fluffy. Stir in the vanilla extract.
- Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
- Fold the dry ingredients into the egg mixture until fully combined.
- Spread the batter evenly in the prepared pan.
- Bake for about 12–15 minutes until the cake springs back when lightly touched.
- Turn the cake onto a kitchen towel dusted with powdered sugar while still warm and roll it with the towel inside.
- Allow it to cool completely in this position.
- Beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Fold in the chopped cherries and optional kirsch.
- Unroll the cooled cake and spread the cream filling evenly over the surface. Reroll without the towel.
- Heat the heavy cream until it simmers, then pour it over the chopped chocolate and butter. Stir until smooth.
- Drizzle the chocolate ganache over the cake roll and garnish with whipped cream, cherries, and chocolate curls.
- Slice, serve, and enjoy!
Notes
Store in the refrigerator for up to 3 days or freeze for up to a month. Roll the cake while warm to prevent cracking and use a serrated knife for clean cuts.
