Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh lemon juice (optional)
- Chopped parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrot, and celery. Sauté until the vegetables soften, about 5-7 minutes.
- Stir in the cumin, coriander, and turmeric. Cook for another minute, allowing the spices to become fragrant.
- Add the red lentils to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 20-25 minutes, or until the lentils are tender.
- Using an immersion blender, blend the soup to your desired consistency, either smooth or chunky, depending on your preference.
- Add salt and pepper to taste, and if you’re feeling zesty, a squeeze of fresh lemon juice is a delightful addition.
- Ladle the soup into bowls and finish with a sprinkle of chopped parsley. Enjoy your comforting meal!
