Description

A cozy and nourishing Egyptian Red Lentil Soup that’s easy to prepare and packed with flavor.


Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh lemon juice (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrot, and celery. Sauté until the vegetables soften, about 5-7 minutes.
  2. Stir in the cumin, coriander, and turmeric. Cook for another minute, allowing the spices to become fragrant.
  3. Add the red lentils to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 20-25 minutes, or until the lentils are tender.
  4. Using an immersion blender, blend the soup to your desired consistency, either smooth or chunky, depending on your preference.
  5. Add salt and pepper to taste, and if you’re feeling zesty, a squeeze of fresh lemon juice is a delightful addition.
  6. Ladle the soup into bowls and finish with a sprinkle of chopped parsley. Enjoy your comforting meal!
