Ingredients

Instructions

  1. Cook the edamame: If using frozen edamame, cook according to the package instructions, typically boiling for about 5 minutes until tender. Drain and let cool.
  2. Prepare the ingredients: While the edamame cools, dice the mango, chop the bell pepper, and finely dice the red onion.
  3. Make the dressing: In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
