Description

A quick and delicious recipe featuring juicy chicken breasts stuffed with savory basil pesto and melty mozzarella cheese, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 chicken breasts
  • 1/2 cup basil pesto
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cherry tomatoes (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast, making sure you don’t cut all the way through.
  3. Fill each pocket generously with basil pesto and a handful of mozzarella cheese.
  4. Season both sides of the chicken with salt and pepper to enhance the flavors.
  5. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until they are golden brown.
  6. Transfer the seared chicken to a baking dish and bake in the oven for 20-25 minutes or until cooked through.
  7. Garnish with cherry tomatoes if desired, and serve warm.

Notes

For extra flavor, marinate chicken breasts in extra pesto for a couple of hours before stuffing and cooking. You can also freeze these chicken breasts for up to 2 months.
