- 4 chicken breasts
- 1/2 cup basil pesto
- 1 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cherry tomatoes (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice a pocket into each chicken breast, making sure you don’t cut all the way through.
- Fill each pocket generously with basil pesto and a handful of mozzarella cheese.
- Season both sides of the chicken with salt and pepper to enhance the flavors.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until they are golden brown.
- Transfer the seared chicken to a baking dish and bake in the oven for 20-25 minutes or until cooked through.
- Garnish with cherry tomatoes if desired, and serve warm.
Notes
For extra flavor, marinate chicken breasts in extra pesto for a couple of hours before stuffing and cooking. You can also freeze these chicken breasts for up to 2 months.
