Description

A comforting Persian Lamb Stew featuring fragrant spices and tender lamb, perfect for family gatherings and cozy dinners.

Ingredients

Scale
  • 2 lbs lamb cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1 cup ground walnuts
  • 1/4 cup pomegranate molasses
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and garlic. Sauté until they soften and become fragrant.
  3. Introduce the lamb cubes to the pot, browning them on all sides.
  4. Stir in the cumin, coriander, cinnamon, and ground walnuts. Mix well to combine.
  5. Pour in the pomegranate molasses and broth, then season with salt and pepper.
  6. Bring the mixture to a simmer and cover. Cook until the lamb is tender, about 90 to 120 minutes.
  7. Serve the stew warm alongside fluffy golden rice.

Notes

Consider marinating the lamb overnight for enhanced flavor. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
