Description

Delicious lemon blueberry bars that combine tart lemon with sweet blueberries for a refreshing dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup lemon juice
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the all-purpose flour, rolled oats, brown sugar, and baking powder in a mixing bowl.
  3. Pour the melted butter into the dry mixture and mix until crumbly.
  4. Press half of the crumb mixture into the bottom of the greased baking dish.
  5. Spread the blueberries evenly over the crust.
  6. Mix the remaining crumb mixture with lemon juice and sprinkle it over the blueberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Cool before slicing into squares for serving.

Notes

Dust with powdered sugar before serving. These bars are great with whipped cream or vanilla ice cream.
