Delicious lemon blueberry bars that combine tart lemon with sweet blueberries for a refreshing dessert.

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (melted)
- 1 cup blueberries (fresh or frozen)
- 1/4 cup lemon juice
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Combine the all-purpose flour, rolled oats, brown sugar, and baking powder in a mixing bowl.
- Pour the melted butter into the dry mixture and mix until crumbly.
- Press half of the crumb mixture into the bottom of the greased baking dish.
- Spread the blueberries evenly over the crust.
- Mix the remaining crumb mixture with lemon juice and sprinkle it over the blueberries.
- Bake for 25-30 minutes or until golden brown.
- Cool before slicing into squares for serving.
Notes
Dust with powdered sugar before serving. These bars are great with whipped cream or vanilla ice cream.
