- 2 cups fresh strawberries, hulled
- 1/4 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream, cold
Instructions
- Start by washing the strawberries thoroughly and hulling them.
- Combine the hulled strawberries with the lemon juice and powdered sugar in a blender. Blend until smooth, then set aside.
- Chill a mixing bowl and whisk attachment in the freezer for about 5 minutes.
- Pour the cold heavy cream into the chilled bowl. Whisk until soft peaks form, being careful not to over-whip.
- Gently fold the strawberry purée into the whipped cream using a spatula.
- Spoon the mousse into serving glasses and chill in the refrigerator for at least 30 minutes before serving.
Notes
Best when served with a dollop of whipped cream or fresh strawberries on top.
