A quick and delicious no-bake dessert combining the crunchiness of cornflakes with the rich taste of peanut butter.

- 2 cups cornflakes
- 1 cup sugar
- 1 cup peanut butter
- 1/2 cup corn syrup
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Combine sugar, corn syrup, and peanut butter in a medium saucepan. Heat over medium, stirring consistently until smooth and bubbly.
- Remove from heat and stir in vanilla extract.
- Pour cornflakes into a large mixing bowl to coat.
- Fold the warmed peanut butter mixture over the cornflakes until coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Sprinkle chocolate chips atop each scoop if desired.
- Allow cookies to cool and set for about 10 minutes before serving.
