Description

A quick and delightful stir-fry of fluffy scrambled eggs and ripe tomatoes, perfect for any occasion.


Ingredients

  • 4 large eggs
  • 2 medium tomatoes, chopped
  • 2 green onions, chopped
  • 2 tablespoons of oil
  • Salt to taste
  • 1 tablespoon of sugar
  • Soy sauce to taste
  • Steamed rice (for serving)

Instructions

  1. Heat the oil in a pan over medium heat.
  2. Crack the eggs into a bowl and whisk them, seasoning lightly with salt.
  3. Pour the beaten eggs into the pan. Scramble gently until they are just set, then remove them from the pan and set aside.
  4. Add a touch more oil if needed and toss in the chopped tomatoes. Sauté until they soften, releasing their juices.
  5. Sprinkle in the sugar and drizzle with soy sauce. Stir to mix everything until well combined.
  6. Return the cooked eggs to the pan and stir in the green onions. Cook for another minute to meld the flavors.
  7. Serve it hot over a bed of steamed rice.
