- 2 medium tomatoes, chopped
- 2 green onions, chopped
- 2 tablespoons of oil
- Salt to taste
- 1 tablespoon of sugar
- Soy sauce to taste
- Steamed rice (for serving)
Instructions
- Heat the oil in a pan over medium heat.
- Crack the eggs into a bowl and whisk them, seasoning lightly with salt.
- Pour the beaten eggs into the pan. Scramble gently until they are just set, then remove them from the pan and set aside.
- Add a touch more oil if needed and toss in the chopped tomatoes. Sauté until they soften, releasing their juices.
- Sprinkle in the sugar and drizzle with soy sauce. Stir to mix everything until well combined.
- Return the cooked eggs to the pan and stir in the green onions. Cook for another minute to meld the flavors.
- Serve it hot over a bed of steamed rice.
