Description

Fresh and flavorful chicken burgers with a zesty lime and kick of red pepper flakes, perfect for a quick meal any day.


Ingredients

  • 1 pound ground chicken
  • ¼ cup green onion (finely chopped)
  • ¼ cup red bell pepper (finely diced)
  • 2 tablespoons cilantro (finely chopped)
  • 2 cloves garlic (minced)
  • Juice from ½ large lime
  • ¾ teaspoon kosher salt
  • ½ teaspoon red pepper flakes
  • 1 tablespoon olive oil (for cooking)
  • 3 cups mixed greens (divided)
  • 1 avocado (sliced)
  • Juice from ½ lime, plus salt (to taste)
  • 2 tablespoons cilantro (finely chopped)
  • 2 tomatoes (sliced or chopped)

Instructions

  1. In a large bowl, combine the ground chicken, green onions, red bell pepper, cilantro, garlic, kosher salt, red pepper flakes, and lime juice. Mix everything thoroughly until well combined.
  2. Divide the mixture into four equal portions. With wet hands, shape each portion into a flat patty.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, sear the patties for about 2½ minutes on each side, or until they’re cooked through and golden.
  4. While the burgers cook, toss your mixed greens with olive oil, lime juice, and salt to taste.
  5. On a plate, arrange the tossed salad, top with burger patties, and add sliced avocado and tomatoes. Finish with a sprinkle of cilantro and a squeeze of the remaining lime juice.

Notes

Feel free to swap ground chicken for turkey or a plant-based meat for a vegetarian option. Store leftovers in an airtight container for up to three days in the fridge or freeze for longer storage.
