Description

A budget-friendly and flavorful Indian dish made with crispy roasted potatoes and vibrant spices.


Ingredients

  • 8 to 10 medium potatoes, peeled & cut into small chunks
  • ยฝ tsp sea salt
  • 1 tsp turmeric
  • 2 to 4 tbsp rapeseed oil or vegetable oil
  • 1 onion, diced
  • 2 tsp black mustard seeds
  • 2 tsp curry powder, curry paste, or garam masala

Instructions

  1. Preheat your oven to 200ยฐC / Gas Mark 6 / 390ยฐF.
  2. Place the potato chunks in a large saucepan and cover them with water.
  3. Stir in the salt and turmeric, then bring the water to a boil.
  4. Once boiling, simmer the potatoes gently for about 5 minutes.
  5. Drain the potatoes and set them aside.
  6. In a large bowl, toss the drained potatoes with the diced onion, mustard seeds, curry powder or paste, and oil.
  7. Spread the coated potatoes onto a large roasting pan.
  8. Roast in the oven for 30 to 40 minutes, or until golden and crispy, turning halfway through.

Notes

For a twist, add diced bell peppers or peas. For heat, include chopped green chilies. Ensure curry paste is vegan if desired.
