Instructions
- Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.
- Beat the softened butter and sugars together in a large bowl until fluffy, about 2-3 minutes.
- Add the egg and vanilla to the butter mixture, mixing until just combined.
- Mix in the dry ingredients on low speed until combined, then fold in 1 cup of chocolate chips.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 3 hours.
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Scoop dough into balls approximately 1 to 1.5 tablespoons in size, placing them on the baking sheets.
- Bake for 8-11 minutes for smaller cookies and 12-14 minutes for larger ones.
- Let the cookies cool on the baking sheet for about 10 minutes before transferring them to a wire rack.
Notes
For a gooey center, slightly under-bake the cookies; they will firm up while cooling on the sheet.
