Description

Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • Green food coloring
  • Mini chocolate chips (for decoration)
  • Watermelon-flavored buttercream frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Whisk together the all-purpose flour, baking powder, and salt in a mixing bowl.
  3. Beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Blend in the dry ingredients, alternating with the buttermilk, until just combined.
  6. Add green food coloring to the batter to achieve your desired watermelon hue.
  7. Fill the lined cupcake liners about two-thirds full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely on a wire rack.
  9. Prepare your watermelon-flavored buttercream frosting, frost the cupcakes, and sprinkle mini chocolate chips on top.
