- 2 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 cup chopped pecans or walnuts (optional)
- Topping: 1/4 cup granulated sugar mixed with 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mix the mashed sweet potatoes, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re adding nuts, fold them in gently.
- Pour the batter into the prepared loaf pan, smoothing the top for an even bake.
- Mix the cinnamon and sugar for the topping in a small bowl, then sprinkle it generously over the batter.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute oil with applesauce. Remember to use fresh sweet potatoes for the best flavor.
