Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup chopped pecans or walnuts (optional)
  • Topping: 1/4 cup granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the mashed sweet potatoes, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re adding nuts, fold them in gently.
  5. Pour the batter into the prepared loaf pan, smoothing the top for an even bake.
  6. Mix the cinnamon and sugar for the topping in a small bowl, then sprinkle it generously over the batter.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, substitute oil with applesauce. Remember to use fresh sweet potatoes for the best flavor.
