Description

Indulge in these soft, sweet Italian buns filled with whipped cream and chocolate, perfect for brunch or dessert.

Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 1 cup Bread Flour
  • 2 teaspoons Instant Yeast
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla
  • 2 large Eggs
  • 1 cup Milk (Whole or 2%)
  • 1/4 cup Neutral Oil (Vegetable or Canola)
  • 1/4 cup Cocoa Powder (Dutch Process)
  • 1 large Egg (for Wash)
  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sugar
  • 1/4 teaspoon Salt (for Whipped Cream)

Instructions

  1. Mix the Dry Ingredients: In a large bowl, combine the all-purpose flour, bread flour, instant yeast, granulated sugar, and salt.
  2. Prepare the Wet Mix: In a separate bowl, whisk together the eggs, milk, vanilla extract, and neutral oil until well combined.
  3. Combine and Knead: Gradually pour the wet mixture into the dry ingredients. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 60-90 minutes, or until doubled in size.
  5. Shape the Buns: Punch the dough down, then divide it into equal portions. Shape each piece into a tight ball and arrange them on a baking sheet lined with parchment paper, leaving space for them to rise.
  6. Second Rise: Cover the shaped buns with a cloth and allow them to rise for another 30-45 minutes.
  7. Preheat the Oven: While the dough rises, preheat your oven to 350°F (175°C).
  8. Egg Wash: If using, brush the tops of the buns with the egg wash before baking.
  9. Bake: Bake for 15-20 minutes or until golden brown. Let them cool slightly while you prepare the whipped cream.
  10. Whip the Cream: In a mixing bowl, beat the heavy whipping cream, powdered sugar, and salt until soft peaks form.
  11. Fill the Buns: When the buns have cooled, slice them open and fill each with whipped cream. Optionally, dust with cocoa powder or powdered sugar.

Notes

For a vegan option, substitute eggs for flax eggs and use non-dairy milk. For added flavor, infuse whipped cream with coffee or orange zest.
