  • 1/4 cup unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 1/3 cups all-purpose flour

  • 1 tsp cornstarch
  • Pinch of salt
  • 1 tsp baking powder
  • 3/4 cup crushed pretzels
  • 3 tbsp melted butter (for pretzel mixture)
  • 1 cup frozen strawberries
  • 1/3 cup water
  • 1.5 tbsp granulated sugar (for topping)
  • 1.5 tbsp unflavored gelatin
  • 1/2 cup heavy cream
  • 2.5 oz cream cheese (softened)
  • 1/3 cup granulated sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Mix in the vanilla extract and egg, blending well.
  4. Whisk together the flour, cream of tartar, cornstarch, pinch of salt, and baking powder in a separate bowl.
  5. Add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the crushed pretzels and melted butter, then set the cookie dough aside.
  7. Combine the frozen strawberries, water, and sugar in a saucepan over medium heat. Cook until the strawberries soften.
  8. Stir in the unflavored gelatin until fully dissolved, then remove from heat and let it cool.
  9. Beat the heavy cream in a mixing bowl until soft peaks form.
  10. Mix the softened cream cheese, sugar, and vanilla extract until smooth in another bowl.
  11. Fold the whipped cream into the cream cheese mixture until well combined.
  12. Form the cookie dough into small balls and place them on a lined baking sheet.
  13. Bake for 10-12 minutes or until lightly golden. Allow them to cool.
  14. Layer each cookie with the strawberry topping and finish with a swirl of frosting.

Notes

Substitute frozen strawberries with fresh ones, but ensure they are not overly juicy to maintain the right consistency.
