- 1/2 cup heavy cream
- 2.5 oz cream cheese (softened)
- 1/3 cup granulated sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Mix in the vanilla extract and egg, blending well.
- Whisk together the flour, cream of tartar, cornstarch, pinch of salt, and baking powder in a separate bowl.
- Add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the crushed pretzels and melted butter, then set the cookie dough aside.
- Combine the frozen strawberries, water, and sugar in a saucepan over medium heat. Cook until the strawberries soften.
- Stir in the unflavored gelatin until fully dissolved, then remove from heat and let it cool.
- Beat the heavy cream in a mixing bowl until soft peaks form.
- Mix the softened cream cheese, sugar, and vanilla extract until smooth in another bowl.
- Fold the whipped cream into the cream cheese mixture until well combined.
- Form the cookie dough into small balls and place them on a lined baking sheet.
- Bake for 10-12 minutes or until lightly golden. Allow them to cool.
- Layer each cookie with the strawberry topping and finish with a swirl of frosting.
Notes
Substitute frozen strawberries with fresh ones, but ensure they are not overly juicy to maintain the right consistency.
