Description

Delicious cookies capturing the essence of pumpkin pie in a handheld treat, perfect for fall festivities.


Ingredients

  • 1 stick butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • Orange gel food coloring (optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Mix in the flour, salt, and baking powder until well combined.
  5. Using a large cookie scoop, portion out 9 equally sized cookie balls onto your prepared baking sheet. Gently flatten each ball to about 1 inch thick.
  6. Press down the center of each cookie to create a well for the filling.
  7. Bake for 8-9 minutes and allow to cool on the baking sheet before enjoying!
