- 1/2 cup of bread crumbs
- 1 tablespoon of butter
- 1 and 1/2 cups of grated mozzarella
- 3 boneless, skinless chicken breasts
- 1 tablespoon of chopped garlic
- 28-ounce can of crushed tomatoes
- 15-ounce can of tomato sauce
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 teaspoons of Italian seasoning
- 4 cups of chicken broth
- 1 cup of freshly grated parmesan cheese
- 1 cup of heavy whipping cream
- 8 ounces of raw rotini pasta
Instructions
- Pour chicken broth into the crockpot.
- Add the chicken breasts, crushed tomatoes, chopped garlic, Italian seasoning, tomato sauce, salt, and pepper.
- Cover the crockpot and cook on high for 3 to 4 hours, or on low for 6 to 8 hours.
- Remove the chicken once cooked and shred it with two forks.
- Pour in the heavy whipping cream, add the rotini pasta, and sprinkle in the grated parmesan cheese.
- Replace the lid and cook on high for an additional 15 minutes or on low for 30 minutes until the pasta is tender.
- Toast breadcrumbs in a skillet with a pinch of butter until golden.
- Serve hot, topping each bowl with breadcrumbs and extra mozzarella cheese.
Notes
Feel free to swap the pasta with other shapes or use canned tomatoes if needed. Sautéing garlic beforehand adds depth to the flavor.
