A slow-cooked pot roast infused with the rich flavors of French onion soup, perfect for family dinners or potlucks.
Ingredients

- 3–4 pounds beef chuck roast
- 2 large onions, thinly sliced
- 3 cups beef broth
- 1 packet onion soup mix
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish (optional)
Instructions
- Sear the roast in a skillet with olive oil, seasoning it with salt and pepper.
- Layer the onions in the bottom of the slow cooker.
- Mix the beef broth, onion soup mix, and Worcestershire sauce in a bowl.
- Pour the broth mixture over the seared roast on top of the onions.
- Slow cook on low for 7-8 hours or high for 4-5 hours until tender.
- Serve the roast hot, garnished with thyme or parsley.
Notes
Allow leftovers to cool before storing in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
