Description

Crispy refried bean tacos are a delicious and budget-friendly treat perfect for family dinners or gatherings, filled with flavorful beans and fresh toppings.

Ingredients

Scale
  • 8 small corn tortillas
  • 2 cups refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sliced jalapeños (optional)
  • Vegetable oil for frying
  • Salt to taste

Instructions

  1. Heat the skillet over medium heat and pour enough vegetable oil to cover the bottom.
  2. Warm the corn tortillas for a few seconds in a separate pan or microwave until soft.
  3. Spread a generous layer of refried beans onto each tortilla.
  4. Fold each tortilla in half and carefully place them in the hot oil, frying until golden and crispy on both sides (about 2-3 minutes per side).
  5. Drain the tacos on paper towels to remove excess oil.
  6. Fill them up with shredded lettuce, diced tomatoes, cheese, and jalapeños if desired!
  7. Serve your crispy tacos hot and enjoy the crunch!

Notes

Best served fresh with sides like guacamole or salsa, and a lime wedge for extra flavor.
